The course offers an in-depth look at the factors that determine the value of coffee in the professional market. This is the Sensory class, learning to evaluate coffee according to the CVA form. Participants will learn how to assess quality through sensory analysis, understand market trends, and apply pricing strategies based on comprehensive data and quality indicators.

Class Schedule
Class Content
The course duration is 16 hours (2 days of classes from 8:30 AM to 5:30 PM).
The classes will take place from June 3rd to June 4th.
Overview of CVA: Analyzing the reasons for system innovations, typical projects, and their impacts on different points in the supply chain.
Getting Acquainted with CATA: Approaching and familiarizing with the CATA lists.
Descriptive Cupping Session: Detailed presentation of the system and a direct cupping practice session.
Understanding the Hedonic Scale: Decoding the Hedonic Scale and its application.
Affective Cupping: Describing the Affective Cupping process and a practical cupping session.
Introduction to the Extrinsic Assessment Form and Its Use: Overview of how to use the Extrinsic Assessment Form.
Cupping with Combined Forms: Grasping and practicing with the Combined Affective and Descriptive Forms.
